I understand what you need, and it can be done with a Number field, for which you have to enable the “Limit Submissions total value” feature.
Here is a screenshot to guide you:
Unfortunately, it doesn’t work with the Single or Multiple choice fields. Your users will have to enter in the Number field the number of items they want to purchase.

I was wondering if there was a way to limit choice options on an item such that if you have 10 items of a form and the choice options are 1, 2, 3, 4, it would deduct that number from the total of 10 when that choice is submitted. So if someone ordered 4 it would only leave 6 left for the next form input. Thank you
